We’re back with another budget-friendly grocery run, and while we didn’t quite stick to our budget, we’re proud of the progress we’ve made. This time around, we ventured to a new store, where prices were slightly higher and selection was limited. However, we still managed to snag some amazing deals, like a fresh jalapeño for just 14 cents!
Smart Shopping Strategies
We’re getting better at choosing produce that’s on sale, opting for generic brands when it doesn’t compromise on taste, and buying in bulk when it makes sense. For instance, we picked up a large head of broccoli, which will be used in multiple recipes throughout the week.
A Delicious Quiche Recipe
One of the highlights of our haul is a mouth-watering quiche recipe that’s easy to make and packed with flavor. With ingredients like smoked ham, broccoli, and a blend of cheeses, this dish is both healthy and satisfying. The best part? You can customize it to your liking by swapping out veggies or omitting the ham for a vegetarian option.
Quiche Recipe
Ingredients:
- 2 teaspoons olive oil
- 2 thick slices of smoked ham, diced (about 2-3 oz)
- 1 small yellow onion, diced
- 3 garlic cloves, minced
- 1 large head of broccoli, chopped into florets
- 1 1/4 cups 2% milk
- 3 large egg whites
- 3 large eggs
- 1/2 cup shredded light Mozzarella cheese
- 1/2 cup grated Pecorino cheese
- 1 teaspoon hot (or dijon) mustard
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Cooking spray
Preparation
- Chop your veggies and grate your cheese as needed.
- Mix eggs, milk, cheese, mustard, and salt & pepper in one bowl. Set aside.
- Pre-heat your oven to 350 degrees.
- Cook down your diced onions, adding garlic after two minutes, until they’re soft and fragrant.
- Add in your diced ham, cooking for an additional minute.
- Add in your broccoli, with a splash of water, and cover. Let it simmer/steam for 5-10 minutes, until the broccoli is slightly softened.
- Lightly spray a pie pan and add the broccoli mixture.
- Cover with egg mixture to the top, then sprinkle with a touch more pecorino.
- Bake for 45 minutes to an hour, until a knife comes out clean and there’s a golden-brown crust on top.
