Delicious Lentil Soup on a Budget: A $25 Grocery Haul

Grocery Haul on a Budget: Delicious Lentil Soup for Under $25

This week’s grocery haul was a resounding success, despite a minor mishap with missing potatoes. For just $25, we scored an impressive haul of fresh produce, protein-rich beans, and pantry staples. Our top pick? Beans, of course! These affordable and filling wonders are perfect for whipping up hearty winter meals like chilis, soups, and stews.

The Power of Pantry Staples

Beans aside, another often-overlooked gem is the humble baguette. While some grocery stores may offer lackluster options, others boast crusty, chewy loaves that elevate any meal. Plus, they’re incredibly affordable (ours cost just over a dollar) and freeze beautifully. Ditch the flimsy, presliced bread and upgrade to a world of flavor and texture!

Cozy Lentil Soup Recipe

Ingredients:

  • 1 cup dried lentils
  • 1 can kidney beans
  • 2 large carrots (or 3 medium)
  • 2 stalks celery
  • 1 large yellow onion
  • 4 cloves garlic
  • 1 large tomato (or a few small ones)

Let’s Get Cooking!

Prep your veggies by chopping the carrots, celery, and onion, and mincing the garlic. Soften the onions in olive oil, then add the garlic, carrots, and celery. Let them mingle for 5-10 minutes until tender. Add dry seasonings, salt, and pepper, then stir in the kidney beans, lentils, stock, and broth. Simmer for 30-45 minutes or until the lentils are tender. Finally, add chopped tomatoes and chili sauce (if using), and let the soup reduce for 10 minutes. Serve with a crusty baguette and a sprinkle of salty cheese for a truly satisfying meal!
