Easy and Delicious

Gather Your Ingredients
- 6 oz tomato paste
- 8 oz tomato sauce
- 1 cup water
- 2 Tbs garlic powder
- 2 Tbs chili powder
- 1 Tbs ground comino (cumin)
- 1.5 tsp coarse ground black pepper
- 1 tsp salt
- 1.5 tsp paprika
- 1 large bell pepper (or 2 medium)
- 1 medium onion
- 1 pk flour tortillas (or homemade)
- 1 1/2 lbs pork country sausage, fully cooked (not dried!), ring type
Let the Magic Begin
Combine the first three ingredients in a Dutch oven or soup pot, mixing well and bringing to a simmer. Add the next six ingredients, incorporating them seamlessly into the pot. Remove the core and ribs from the bell pepper(s) and peel the onion, slicing both into 1/4″ wide strips and adding them to the pot.
Sizzling Sausage
Slice the sausage into 1/4″ medallions, cutting them into half-circles. Fry the sausage in a large heavy frying pan until slightly blackened on both sides, then add it to the pot along with the renderings. Mix well and let it cook for at least 30-45 minutes, allowing the flavors to meld together.
Savor the Flavor
Taste and adjust the sauce as needed. Serve using a slotted spoon onto fresh tortillas heated in a skillet or on a comal. For a twist, try serving over rice. Whichever way you choose, get ready to indulge in a true south central Texas culinary delight!
