Springtime Delicacy: Roasted Morel Mushrooms with Fresh Herbs
As the seasons change, nature awakens, and the culinary world rejoices. One of the most anticipated arrivals is the morel mushroom, prized for its unique flavor and aroma. This elegant recipe showcases the beauty of these springtime treasures, paired with fresh herbs and a touch of crème fraîche, served atop toasted bread.
Selecting the Perfect Mushrooms
When sourcing fresh morel mushrooms, look for those with a rich, earthy aroma and a delicate, honeycomb appearance. If you can’t find fresh morels, substitute with fresh porcinis or chanterelles.
A Harmonious Blend of Flavors
To begin, preheat your oven to 400°F (200°C). In a large bowl, combine 1 pound of fresh morel mushrooms, 1 tablespoon of extra-virgin olive oil, 3 medium garlic cloves, thinly sliced, and 1 tablespoon of finely chopped fresh thyme or savory leaves. Season with kosher salt and freshly ground black pepper.
Roasting the Mushrooms
Transfer the mushroom mixture to a 13-by-9-inch baking dish and spread in an even layer. Roast in the preheated oven for about 20 minutes, stirring halfway through, until the mushrooms are tender and release their juices.
The Shallot-Crème Fraîche Sauce
Meanwhile, melt 2 tablespoons of unsalted butter in a small, nonreactive frying pan over medium heat. Add 1/4 cup of finely chopped shallots and cook, stirring occasionally, until browned, about 3 to 4 minutes. Remove from heat, add 1 tablespoon of Cognac, and simmer until the alcohol smell has cooked off. Assembling the Dish
When the mushrooms are ready, remove the baking dish from the oven and stir in the shallot-crème fraîche mixture. Return to the oven and bake for an additional 5 minutes, allowing the flavors to meld. Meanwhile, toast 4 slices of country bread, such as pain au levain, by brushing with olive oil and seasoning with salt and pepper. Broil until golden brown, about 2 to 3 minutes. Transfer the toasts to a serving dish and spoon the mushroom mixture over them. Serve immediately, savoring the essence of spring.
