Discover the Flavors of Ecuador: Humita Recipe
Ecuador’s culinary gem, humita, is a must-try for anyone who loves fresh corn and cheese. This traditional dish has been a staple in Ecuadorian cuisine for centuries, and its simplicity is what makes it so delicious.
The Humita Story
Humita is essentially a tamale made with fresh corn, masa, and cheese, wrapped in a corn husk and steamed to perfection. This recipe, courtesy of Chef Jose Garces of Amada restaurant in Philadelphia, brings the authentic flavors of Ecuador to your table.
Gathering Ingredients
Before you start cooking, make sure you have the following ingredients:
- 2 cups of fresh corn kernels (from about 3 ears)
- 6 tablespoons of unsalted butter (3/4 stick), at room temperature
- 1 teaspoon of baking powder
- 1 tablespoon of kosher salt
- 2 tablespoons of granulated sugar
- 1 cup of vegetable stock
- 1 cup of instant white corn flour
- 8 ounces of queso fresco, crumbled (about 2 cups)
- 15 corn husks, soaked, drained, and dried of excess water
Preparing the Humita
To begin, place a steamer in a large pot and fill it with enough water to reach the bottom of the steamer. Over low heat, bring the water to a simmer.
Next, combine corn kernels, butter, baking powder, salt, and sugar in a food processor fitted with a blade attachment. Process until smooth, about 30 to 40 seconds. Transfer the mixture to a large bowl and add stock, corn flour, and queso fresco. Mix until thickened and no dry spots remain, about 30 strokes.
Assembling the Humita
Spoon about 3 tablespoons of the corn mixture into the middle of each husk. Fold the bottom of the husk up and each side in, then fold the top over to seal. Place the humitas seam side down in the steamer, layering on top of one another. Cover and steam until the filling is set and no longer raw tasting, about 30 to 40 minutes.
