Hearty Irish Rabbit Stew Recipe
A Traditional Favorite
Rabbit is abundant in Ireland, making it a staple ingredient in many traditional dishes. This easy-to-make stew is a testament to the country’s rich culinary heritage.

Ingredients:
- 1 rabbit
- 1 1/2 oz butter
- 3 sliced onions
- 1 oz flour
- 2 cups chicken stock
- Juice of 1 lemon
- 3 carrots, sliced
- 4 oz mushrooms
- Seasoning and lemon strips
Preparing the Stew
To begin, wash, dry, and joint the rabbit. Next, melt the butter in an earthenware casserole over medium heat. Fry the rabbit on both sides for 1 minute, then remove it from the pot. Set it aside for later.
Soften the Onions
In the same pot, fry the onions until they’re soft and translucent. Add the flour and cook for an additional minute, stirring constantly.
Add the Stock and Lemon Juice
Pour in the chicken stock and lemon juice, bringing the mixture to a boil. Then, add the rabbit and carrots back into the pot, returning it to a boil.
Finishing Touches
Season the stew with salt and pepper to taste. Add the mushrooms and stir well. Cover the casserole with a lid and place it in the top of a preheated oven at 400°F (200°C, Gas 6). Let it cook for 1 hour 30 minutes.
Serve and Enjoy!
Serve the stew hot, garnished with lemon strips and accompanied by mashed fried turnip and champ potatoes. This hearty dish is sure to become a family favorite!
