- 1/2 cup small-dice bacon (about 3 ounces)
- 1/2 cup finely diced red onion (about 1/2 small onion)
- 2 medium garlic cloves, finely chopped
- 1 cup ketchup
- 1/2 cup cider vinegar
- 1/2 cup packed dark brown sugar
- 1/4 cup Worcestershire sauce
- 3 tablespoons bourbon
- 2 tablespoons dark or robust molasses (not blackstrap)
- 2 teaspoons chili powder
- 1 1/2 teaspoons smoked paprika
- 1 teaspoon ground mustard
- Kosher salt
- Freshly ground black pepper

Step 1: Crisp Up the Bacon
Place the bacon in a small saucepan over medium heat and cook, stirring occasionally, until crisp, about 8 minutes. Remove the bacon from the pan with a slotted spoon and set aside.
