A Quick and Easy Hollandaise Sauce
Forget the hassle of traditional hollandaise sauce recipes. This quick and easy version uses a blender to emulsify the ingredients, resulting in a smooth and creamy sauce in just minutes.
Ingredients:
- 2 large egg yolks
- 1 tablespoon freshly squeezed lemon juice
- 8 tablespoons unsalted butter (1 stick), melted
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 8 cups water (2 quarts)
- 4 teaspoons distilled white vinegar
- 4 large eggs
- 2 English muffins
- Unsalted butter
- Kosher salt
- Freshly ground black pepper
- 5 ounces thinly sliced ham, warmed
- Sweet paprika (optional)
Instructions:
Hollandaise Sauce
- Fill a large saucepan with water and bring to a simmer. Remove from heat and set aside.
- Blend egg yolks and lemon juice in a blender until lightened in color.
- Reduce blender speed and slowly drizzle in melted butter.
- Add salt and pepper, and pulse to combine.
- Keep sauce warm by placing the blender pitcher in the reserved hot water.
Poached Eggs
- Bring water to a simmer in a medium pot. Reduce heat to low.
- Stir in vinegar.
- Crack 1 egg into a small cup or ramekin. Gently slide into the simmering water.
- Repeat with remaining eggs, spacing evenly in the water.
- Cook until whites are just set, about 3 minutes.
- Lift eggs out of the water with a slotted spoon and place in a bowl of warm water to keep warm.
Assembly
- Split and toast English muffins. Coat with a thin layer of butter and season with salt and pepper.
- Place muffins on serving plates and divide warm ham slices among them.
- Remove eggs from warm water and blot excess water from the underside of the spoon.
- Slide eggs onto the ham and top with desired amount of hollandaise sauce.
- Sprinkle with paprika, if desired, and serve immediately.
