The Mai Tai, a timeless classic, has been tantalizing taste buds for nearly a century. Its origins date back to the 1930s, courtesy of Victor “Trader Vic” Bergeron Jr. Today, we’re fortunate to have Martin Cate, owner of San Francisco’s renowned Smuggler’s Cove, share his take on this iconic recipe, inspired by Jeff Berry’s book Beachbum Berry’s Sippin’ Safari.
The Essential Ingredient: High-Quality Orgeat
What sets the Mai Tai apart is the use of orgeat, an almond-sugar syrup that adds richness and depth to the cocktail. Don’t settle for a cheap substitute; instead, opt for a premium brand like Small Hand Foods, which uses whole blanched almonds to create its signature syrup.

Ingredients:
- 2 ounces aged rum
- 3/4 ounce freshly squeezed lime juice, with juiced lime half reserved
- 1/2 ounce orange curaƧao
- 1/4 ounce Rich Simple Syrup (rock candy syrup)
- 1/4 ounce orgeat
- 1 cup crushed ice
- 1 mint sprig, for garnish
Shake, Pour, and Enjoy!
Combine all ingredients except the mint sprig in a cocktail shaker, shake vigorously, and pour the entire contents into a double Old Fashioned glass. Garnish with the juiced lime half and a mint sprig, and you’re ready to transport your taste buds to a tropical paradise.
