Gather Your Ingredients
For the ice cream:
- 2 cups whole milk
- 2 cups heavy cream

- 8 large egg yolks

For the cookies:
- 1 stick (8 tablespoons) vegan buttery spread
- 2 cups granulated sugar (certified vegan)
- 1/2 cup molasses
- 2 tablespoons flaxseeds pureed with 6 tablespoons water
- 1 tablespoon white vinegar
- 2 1/2 cups sifted bread flour
- 1 tablespoon baking soda
- 2 teaspoons ground ginger
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves

Make the Ice Cream
Combine milk, cream, and half of the sugar in a 4-quart saucepan. Cook over high heat, stirring occasionally, until the mixture comes to a boil.
