Gather Your Ingredients

For the ice cream:

  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 1/4 cups granulated sugar
  • 8 large egg yolks

For the cookies:

  • 1 stick (8 tablespoons) vegan buttery spread
  • 2 cups granulated sugar (certified vegan)
  • 1/2 cup molasses
  • 2 tablespoons flaxseeds pureed with 6 tablespoons water
  • 1 tablespoon white vinegar
  • 2 1/2 cups sifted bread flour
  • 1 tablespoon baking soda
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground cardamom

Make the Ice Cream

Combine milk, cream, and half of the sugar in a 4-quart saucepan. Cook over high heat, stirring occasionally, until the mixture comes to a boil. Meanwhile, whisk together the egg yolks and remaining sugar until smooth. Temper the egg mixture by slowly pouring the hot cream mixture into the eggs, whisking constantly. Make the Cookies
