- 2 pounds green beans
- 1 medium yellow onion
- 3 tablespoons olive oil
- Salt
- Freshly ground black pepper
- 1/3 cup red wine vinegar
- 1 tablespoon granulated sugar
- 1/4 cup coarsely chopped Italian parsley
Let’s Get Cooking!
Step 1: Blanch the Green Beans
Bring a large pot of heavily salted water to a boil. While waiting for the water to boil, prepare an ice water bath by filling a large bowl halfway with ice and water. Remove the stems from the green beans. Once the water is boiling, cook the beans until they’re crisp-tender, about 3 minutes. Drain and immediately submerge them in the ice water bath until cooled. Drain and set aside.
Step 2: Caramelize the Onions
Heat the oil in a large frying pan over medium heat until it’s shimmering. Add the sliced onion and cook until it’s caramelized and golden, about 20 minutes. Season with salt and pepper to taste.
Step 3: Combine and Season
Add the reserved green beans, vinegar, and sugar to the pan with the onions. Cook, stirring occasionally, until the sugar has dissolved, about 2 minutes. Stir in the parsley, taste, and season with additional salt and pepper as needed.
