Savory Beef and Broccoli Chow Fun Recipe

A Delicious Twist on a Classic Stir-Fry

Are you tired of ordering take-out and wanting to create a mouth-watering dish at home? Look no further! This beef and broccoli chow fun recipe from the talented duo behind Boston’s Myers + Chang restaurant is a game-changer. With its tender strips of marinated beef, crisp Chinese broccoli, and flavorful Fun Sauce, this dish is sure to become a staple in your kitchen.

The Perfect Combination of Flavors

The secret to this recipe lies in the harmonious balance of its ingredients. The beef is marinated in a mixture of soy sauce, black pepper, and sesame oil, giving it a rich and savory flavor. The Chinese broccoli adds a delightful crunch, while the Fun Sauce brings everything together with its tangy and slightly sweet notes. And let’s not forget the chewy rice noodles, which soak up all the flavorful goodness.

A Versatile Recipe for All

This recipe is not only delicious but also versatile. If you’re a vegetarian, simply substitute the beef with firm tofu and skip the marinating step. The Fun Sauce is already vegan, so you can enjoy it without any modifications. And if you’re feeling adventurous, try pairing the dish with other Myers + Chang recipes, such as their Braised Short Rib Dumplings with Sichuan Chili Oil or Sweet Potato and Chinese Sausage Fritters with Sriracha Aioli.

Getting Started

Before you begin, make sure you have all the necessary ingredients, including London broil or flank steak, gai lan or broccoli, rice noodles, scallions, ginger, garlic, and Fun Sauce. Yes, you read that right – Fun Sauce! This magical sauce is the key to bringing all the flavors together.

Making the Fun Sauce

To create the Fun Sauce, whisk together soy sauce, black Chinkiang vinegar, sesame oil, black pepper, and water in a saucepan. Bring the mixture to a boil, then reduce the heat and slowly add cornstarch, whisking continuously. Once the sauce thickens, remove it from the heat and let it cool. You can store it in an airtight container in the refrigerator for up to 2 months.

Preparing the Chow Fun

Marinate the beef in half of the Fun Sauce, along with black pepper, for at least a few hours or overnight. Then, heat vegetable oil in a wok or large skillet over high heat and add the gai lan, broccoli, and onions. Stir continuously for 3 minutes, adding water as needed to create steam. Remove the vegetables from the wok and set them aside.

Next, add more vegetable oil to the wok and cook the beef for 2 minutes, stirring continuously. Remove the beef from the wok and set it aside with the vegetables. Finally, add the remaining vegetable oil, rice noodles, scallions, ginger, garlic, and water to the wok. Cook for 1 minute, then add the beef and vegetables back into the wok. Stir-fry everything together, adding the remaining Fun Sauce and cooked sauce from the beef. Serve immediately and enjoy!
