Savory Quesadillas with a Twist

Flavorful Fillings

When it comes to quesadillas, the fillings can make all the difference. For a unique twist, try combining sautéed cremini mushrooms with crumbled chorizo. This flavorful duo will elevate your quesadilla game and leave you wanting more.

A Simple yet Satisfying Recipe

This easy recipe yields 4 small quesadillas, perfect for a quick lunch or dinner. With a total cooking time of just 25 minutes, you can have these delicious treats on the table in no time.

Gather Your Ingredients

To make these quesadillas, you’ll need:

  • ¼ to ½ pound Salvadorian or Mexican chorizo, removed from casings
  • ¼ to 1/2 pound cremini mushrooms, thickly sliced
  • 4 fresh corn tortillas
  • ½ pound Oaxaca, Asadero, Quesillo, or Monterey jack cheese, cut into cubes or torn into small pieces
  • ½ tablespoon oil

Cooking the Chorizo and Mushrooms

Start by cooking the chorizo in a frying pan over medium heat. Break up the meat into small pieces as it cooks, about 10 minutes. Then, add the sliced mushrooms to the pan and mix with the chorizo. Continue cooking for another 5 minutes, until the mushrooms are soft and the juices have reduced.

Assembling the Quesadillas

Using a spatula, scrape the chorizo-mushroom filling into a bowl. Carefully wipe out any remaining bits from the pan and turn the heat to medium low. Add a corn tortilla to the pan, followed by 1/4 of the cheese and 1/4 of the chorizo-mushroom filling. Fold the tortilla in half and let cook for about 2 minutes. Flip and cook another 2 to 3 minutes, until the cheese is melted and the tortilla is crispy.

Serve and Enjoy!

Repeat the process with the remaining ingredients to create three more quesadillas. Serve hot and enjoy the perfect blend of flavors and textures in every bite.
