Spring’s Fresh Fusion: A Delicious Salad Recipe
As the seasons change, our palates crave something new and exciting. This spring-inspired salad is a refreshing twist on the classic iceberg lettuce salad, elevated by a rich and creamy white balsamic dressing.
The Star of the Show: White Balsamic Dressing
This signature dressing is a game-changer, with a unique flavor profile that sets it apart from traditional balsamic vinegars. Processed differently to maintain its pale color, white balsamic vinegar adds a subtle sweetness without overpowering the other ingredients. If you can’t find white balsamic, feel free to substitute with white wine or champagne vinegar.
Salad Ingredients: A Harmonious Blend
- 1/4 pound snow or snap peas, cleaned
- 1/4 pound English peas, removed from pod
- 6 radishes, thinly sliced
- Kosher salt and cracked black pepper, to taste
- 4 ounces white balsamic dressing
- 2 heads butterhead or other head lettuce (such as Bibb or Boston)
- 1/4 cup sliced almonds, toasted
Crafting the Perfect Dressing
Combine 3/4 cup extra virgin olive oil and 3/4 cup vegetable oil in a bowl. In a separate mixer bowl, whip together 2 egg yolks, 1 minced shallot, 1 teaspoon kosher salt, and 1/4 teaspoon white pepper. Gradually add the oil mixture, followed by 1/2 cup white balsamic vinegar, until fully incorporated. Taste and adjust seasoning as needed.
Assembling the Salad
Fill a large pot with salted water and bring to a boil. Cook the snow peas until tender, then plunge them into an ice-water bath. Repeat with the English peas and reserve. In a large bowl, combine the peas, radishes, and a sprinkle of salt and pepper. Drizzle with 2 tablespoons of dressing and toss to coat.
Plating Perfection
Place half a head of butterhead lettuce on each plate, followed by the pea and radish mixture. Drizzle with remaining dressing and sprinkle with toasted almonds. Serve with additional dressing and fresh cracked black pepper on the side.
Beverage Pairing: A Match Made in Heaven
The rich, creamy flavors of this salad call for a wine that can stand up to its complexity. A Chardonnay with nutty flavors and a juicy finish is the perfect pairing.
