Tropical Twist: Grilled Salmon with Spicy Orange Glaze and Baby Bananas

Gather Your Ingredients
- 4 wild salmon steaks, skin on (6 oz each)
- 4 ripe baby bananas, peeled and halved lengthwise
- 3/4 cup orange marmalade
- 3/4 chipotle pepper in adobo, seeded and chopped
- 1 tsp chipotle pepper adobo sauce
- Juice of 1/4 fresh lime
- Canola cooking spray
- Dry mojo seasoning
- Five spice powder
- Fresh lime wedges
Cold Prep: Setting the Stage
Before firing up the grill, make sure to prepare your ingredients. Use plump salmon fillet steaks, and remove any pin bones. Apply a liberal amount of dry mojo seasoning to the steak flesh, and season the baby bananas with five spice powder. Mix the orange marmalade, chipotle pepper, adobo sauce, and lime juice until smooth.
Hot Prep: Grilling to Perfection
Preheat your gas or charcoal grill to medium-high heat. Clean and oil the grates well to prevent sticking. If using charcoal, soak a cup of your favorite wood chips and scatter them on the coals before grilling the salmon.
