Sweet Surprises from Premade Pizza Dough

The Essentials
Before you get started, make sure you have the following ingredients on hand:
- 14-16 ounces premade pizza dough (or 2/3 of our Basic Pizza Dough recipe)
- Flour for dusting
- 1/2 cup peanut butter
- 1/2 cup jam or jelly
- 2 quarts vegetable oil
- Powdered sugar for dusting

Don’t forget to grab a candy/fat thermometer for frying – it’s crucial for achieving the perfect temperature.
Game Plan
To ensure crispy, golden-brown fritters, keep the oil at a constant temperature (365°F) while frying. Adjust the heat as needed to maintain the ideal temperature.
Let’s Get Started!
Step 1: Prepare the Dough
Line a baking sheet with parchment paper and set it aside. Roll out the pizza dough to about 1/4 inch thick on a lightly floured surface. Cut the dough into 12 rectangles, each measuring 1-1/2 by 3 inches.
Step 2: Add the Filling
Place a small amount of peanut butter and jam in the center of each rectangle. Fold and seal the edges to create a neat package.
Step 3: Let it Rise
Transfer the uncooked fritters to the prepared baking sheet and cover with plastic wrap or a damp towel. Let them rise in a warm place for about 30 minutes, or until puffy and about 1/2 inch thick.
Step 4: Fry to Perfection
Heat the vegetable oil in a Dutch oven or large pot to 365°F. Line a second baking sheet with paper towels. Fry 4 fritters at a time until golden brown, flipping halfway through. Remove the fritters with a slotted spoon and drain on paper towels. Repeat with the remaining fritters.
