A Savory Breakfast Twist
What’s better than a juicy taco? A breakfast taco, of course! And what’s even more incredible is that you can whip up this mouthwatering dish in just 20 minutes. Yes, you read that right – 20 minutes!
The Magic Ingredients
- 1 1/2 cups cooked seasoned ground beef (leftover taco filling works wonders)
- 6 large eggs
- Kosher salt, to taste
- 6 corn tortillas
- Ketchup, for the ultimate diner touch
- Vegetable oil, for frying
Frying Up a Storm
Heat a small nonstick skillet over medium heat and add a dash of oil. Then, add the cooked beef and let it simmer for about 5 minutes. Once heated through, push the beef to the side and add a bit more oil to the center. Crack in an egg and season with a pinch of salt. Fry until the whites are set, then remove to a warm plate and repeat with the remaining eggs.
Tortilla Time
While the eggs are cooking, heat the tortillas either directly over a gas flame or in a dry cast-iron skillet. You’ll know they’re ready when they’re puffed and slightly blistered.
Assemble and Serve
