In just 50 minutes, you can create a mouth-watering pasta dish that combines the goodness of chicken, broccoli, and cheese. This easy recipe serves 4 people and requires minimal effort.
Gather Your Ingredients
To make this dish, you’ll need:
- 4 to 5 cups broccoli florets (about 1 large bunch)
- 2 tablespoons olive oil
- 4 skinless, boneless chicken breast halves, cut crosswise into 1/2-inch-wide strips
- 1 large red bell pepper, thinly sliced
- 1 2/3 cups whipping cream
- 1 1/2 cups grated Parmesan cheese
- 1/2 cup grated Monterey Jack cheese
- 12 ounces penne or mostaccioli pasta, freshly cooked

First, heat your broiler and butter a 13-inch by 9-inch by 2-inch baking dish. In a large heavy pan or Dutch oven, warm the olive oil over medium-high heat. Sauté the chicken strips in batches until they’re just cooked through, about 4 minutes.
