As a West Coast native, I’ve always been fascinated by the rich flavors and spices of New Orleans cooking. While I may not be a born-and-bred New Orleanian, I’ve taken it upon myself to master the art of Cajun cuisine – and I’m not apologizing for it!

The Holy Trinity of Cajun Cooking

At the heart of every authentic Cajun dish lies the “holy trinity” of bell peppers, onions, and parsley. I’ve combined these ingredients with a dash of creole seasoning to create a flavor profile that’s both bold and familiar. And, dare I say it, unmistakably Cajun.

Get Cooking!

Here’s what you’ll need to get started:

  • Unsalted butter, for greasing the baking dish
  • Canola oil
  • Yellow onion, finely chopped
  • Green bell pepper, finely chopped
  • Garlic clove, minced
  • Fresh parsley, chopped
  • Creole seasoning with salt
  • Ground cumin
  • Black pepper
  • All-purpose flour
  • Whole milk
  • Cooked Andouille sausage, chopped
  • Large eggs, separated
  • Pinch of salt
  • Pinch of cream of tartar

Let’s Get Cooking!

Preheat your oven to 350°F and generously butter a 2-quart baking dish. In a medium skillet, heat the oil over medium heat and sauté the onions and bell peppers until soft and translucent. Add the garlic and parsley, cooking for an additional minute.

The Magic Happens

Stir in the creole seasoning, cumin, and black pepper, then reduce the heat to low and sprinkle in the flour. Whisk in the milk, cooking until thick and bubbly. Add the sausage and stir to combine.

Egg-stra Special

Separate the eggs and whisk the yolks until well combined. Add about 1/2 cup of the vegetable mixture to the egg yolks and whisk well. Beat the egg whites until soft peaks form, then fold them into the egg yolk mixture.

The Grand Finale

Spoon the mixture into the prepared baking dish and bake for 40-45 minutes, or until puffed, browned, and no longer jiggly in the center. Let cool for 15 minutes before serving warm.
