Cake Preparation
Preheat your oven to 350°F (180°C). Butter a 9-by-13-inch baking dish and line it with parchment paper, leaving some overhang on two sides. Butter the parchment paper as well.
In a large bowl, sift together 1 1/4 cups of all-purpose flour, 2 teaspoons of baking powder, and 2/3 cup of sugar. Whisk in 1/2 teaspoon of kosher salt. In another bowl, whisk together 3/4 cup of warm water, 2 large eggs, 1/2 cup of canola oil, and 1 tablespoon of vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined. The batter will be thick.
Baking and Cooling
Spread the batter into the prepared dish and bake for 20 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes in the dish, then remove it from the dish and let it cool completely. Remove the parchment paper and return the cake to the dish.
Ice Cream and Whipped Cream
Place 3 pints of salted caramel ice cream in a bowl and stir with a large metal spoon until spreadable. Spread the ice cream over the top of the cake in an even layer. Cover with plastic wrap and freeze until firm, about 4 hours.
In a separate bowl, whip 1 1/2 cups of heavy cream, 2 tablespoons of sugar, and 1 teaspoon of vanilla extract until medium-stiff peaks form.
Assembly and Serving
Spread the whipped cream over the ice cream in an even layer. Drizzle with caramel sauce and cut into squares. Serve immediately and enjoy!
