As I reflect on my culinary journey, I’m reminded of the treasured recipes that have been passed down through generations of my family. One such recipe that brings back fond memories is a hearty, comforting dish that features chicken, vegetables, and a rich, savory sauce.
A Recipe Born from Nostalgia
This recipe is inspired by my son’s childhood, when I would often use Campbell Mushroom Soup as a staple ingredient in many of my dishes. The result was a flavorful, satisfying meal that has become a staple in our household.

Gathering Ingredients
To prepare this dish, you’ll need the following ingredients:
- 5 large chicken legs and thighs
- 1 cup each of chopped carrots, onions, and celery (approximately 2-inch pieces)
- 1 can of Campbell Mushroom Soup
- Salt, pepper, rosemary, and Mrs. Dash
- Fresh garlic, minced (to taste)
Bringing it All Together
To begin, preheat your oven to 400 degrees Fahrenheit. In a 9×13 inch pyrex dish, arrange the chopped vegetables in the bottom. Place the chicken on top of the vegetables, sprinkling the dry seasonings generously over the top. Cover the dish with foil and bake for 30-40 minutes. Remove the foil and mix the can of Mushroom Soup with a can of water and minced garlic to taste. Pour the soup mixture over the chicken, then rinse the can with an additional 1/2-3/4 can of water and pour it over the chicken as well. Return the dish to the oven and cook for an additional 30 minutes, uncovered.
The Finishing Touches
Once the cooking time is complete, remove the dish from the oven and quickly transfer the chicken to a plate. Be careful, as there will be a bit of grease that comes off the meat. Use the remaining juices in the pan to create a rich, savory gravy.
