Homemade Butterscotch Candy: A Sweet and Easy Treat

- 1/2 cup packed light brown sugar
- 3/4 cup water
- 1/2 cup light corn syrup
- 8 tablespoons unsalted butter, cut into 1-inch pieces
- 1/4 cup honey
- 3/4 teaspoon fine salt
- 1/2 teaspoon vanilla extract
- Cooking spray or butter for greasing the pan
Prepare Your Pan
Line a 13-by-9-inch baking dish with parchment paper, making sure it lies smooth and flat. Coat the parchment and sides of the dish with a thin layer of cooking spray or butter. Set it aside for now.
Heat Up the Magic
Place the sugars, water, and corn syrup in a large saucepan over medium heat. Stir until the sugars melt, which should take around 10 minutes. Attach a candy thermometer to the saucepan and cook the mixture without stirring until it reaches 270°F, about 20 to 25 minutes.
