  • 1 pound pitted prunes
  • 1/2 pound sweet Italian sausage

  • 1 teaspoon ground sage
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 8 medium celery stalks
  • 2 medium Granny Smith apples
  • 3 large eggs

Preheat your oven to 350°F and arrange a rack in the middle. Remove the crust from the bread and cut it into 1/2-inch cubes. Spread the bread cubes on a baking sheet and bake until light golden brown, about 10 minutes.

Simmering Prunes and Sausage

While the bread is baking, heat the vermouth in a medium saucepan over medium heat until simmering. Add the prunes and simmer until the vermouth has been absorbed, about 2 minutes.
