Elevate Your Mealtime with This Savory Risotto Recipe
A Flavorful Twist on a Classic Dish
When it comes to special occasions or cozy nights in, a rich and satisfying risotto is always a great choice. This recipe combines the creaminess of Arborio rice with the savory flavors of prosciutto, chicken, and mushrooms, making it a show-stopping main course.
Gather Your Ingredients
Before you start cooking, make sure you have the following ingredients on hand:
- 1 cup Arborio rice
- 1 1/2 pounds cubed chicken
- 3-4 cups chicken stock
- 1/4 cup white wine (Riesling works well)
- 10 crimini mushrooms, sliced
- 2 tbsp olive oil
- 1 tsp sea salt
- Pinch of pepper
- 1 tbsp paprika
- 2 small tomatoes
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup Parmesan cheese
- 5 cloves garlic
- 1 large onion
- 5 tbsp butter
- 75 grams prosciutto
Let’s Get Cooking!
Step 1: Prepare the Aromatics
Combine onions, garlic, and 4 tbsp of butter in a small saucepan over medium heat. Once the butter has melted, reduce the heat to medium-low and let simmer for 30-45 minutes. Strain the mixture through a sieve and set it aside.
Step 2: Sauté the Mushrooms
Melt 1 tbsp of butter in a pan over medium-high heat. Add the mushrooms, salt, and pepper, and cook until the liquid has been reduced. Set the mushrooms aside once they’re finished.
Step 3: Heat the Chicken Stock
In a medium saucepan, heat the chicken stock over medium-low heat. Start the stock about five minutes before you begin cooking the risotto.
Step 4: Cook the Risotto
Heat a large pan over high heat. Add the olive oil and chicken, stirring to sear all sides. Add the paprika and cook for about 1 minute. Then, add the Arborio rice and stir to coat the rice in paprika and oil.
Step 5: Add the Wine and Stock
Add the tomatoes, salt, and cook for about 1-2 minutes, stirring consistently. Add the wine and stir to remove any bits that have stuck to the pan. The wine should boil immediately, and after about 1 minute, you can start adding the chicken stock a few ladles at a time. Continue stirring frequently.
Step 6: Finish with Flair
After about 10 minutes, taste a few pieces of rice for doneness. The rice should be soft but maintain a little bite. Once the rice has reached this point, you can add the parsley, prosciutto, mushrooms, and strained butter. Remove from heat and stir in the Parmesan cheese. Congratulations – you’ve created a stunning risotto!
