Savor the Flavor: A Simple yet Elegant Spaghetti Recipe

A Harmonious Blend of Flavors

Imagine a dish that combines the comfort of spaghetti with the sweetness of roasted cherry tomatoes, the tanginess of feta, and the freshness of herbs. This easy-to-make recipe yields 4 servings and can be prepared in just 50 minutes, with 30 minutes of active cooking time.

The Essential Ingredients

To create this culinary masterpiece, you’ll need:

  • 12 ounces of spaghetti
  • 2 dry pints of small cherry or grape tomatoes
  • Olive oil
  • Kosher salt and freshly ground black pepper
  • 6 cloves of garlic, minced
  • 1/4 cup of packed minced fresh herbs (such as parsley, chives, and basil)
  • About 1 cup of crumbled feta

Roasting the Cherry Tomatoes

Preheat your oven to 375°F (190°C). On a large rimmed baking sheet, toss the cherry tomatoes with a drizzle of olive oil and a sprinkle of salt and pepper. Roast them in the oven for about 20 minutes, or until they’re lightly caramelized and shriveled.

Cooking the Spaghetti

While the tomatoes are roasting, bring a large pot of salted water to a boil. Cook the spaghetti according to package directions until it reaches al dente. Reserve 1/2 cup of the pasta cooking water before draining the spaghetti.

The Garlic and Herb Sauce

In a large frying pan, warm 1/4 cup of olive oil over medium heat. Add the minced garlic and cook, stirring occasionally, until it’s sizzling and lightly colored. Add the reserved pasta cooking water and bring to a boil, stirring constantly. Then, add the cooked spaghetti and toss to coat with the garlic mixture.

Combining the Flavors

Add the roasted cherry tomatoes and fresh herbs to the spaghetti mixture. Toss everything together to combine. Finally, transfer the pasta and sauce to a large, shallow, warm serving bowl. Toss in the crumbled feta and season with salt and pepper to taste. Serve immediately and enjoy!
