You can prepare the dough the night before to make your morning even easier.

Harissa, a spicy Tunisian paste, adds a bold kick to this breakfast pizza. You can find harissa in tubes or jars at Middle Eastern markets or gourmet stores, or even make your own at home.

Make-Ahead Magic

To simplify your morning, prepare the pizza dough the night before and refrigerate it until you’re ready to bake. Alternatively, use a high-quality store-bought dough to save time.

Rise and Shine: Let’s Make Pizza!

Step 1: Activate the Yeast

Combine warm water (between 110°F and 115°F) and yeast in a stand mixer bowl. Let the mixture sit for 10 minutes until it’s bubbling.

Step 2: Mix and Knead

Add flour, sugar, and salt to the bowl and mix on low speed until the dough comes together. Increase the speed to medium and knead for 8-10 minutes until the dough is smooth and stretchy.

Step 3: Let it Rise

Transfer the dough to an oiled bowl, cover it with a damp towel or plastic wrap, and let it rise in a warm place for about 1 hour or in the refrigerator for up to 2 days.

Step 4: Prep the Toppings

Heat your oven to 450°F and bake thinly sliced pancetta until crispy. Break it into small pieces and set aside. Wash the baking sheets and return them to the oven to heat up while you prepare the dough.
