Hearty Spinach Lasagna Roll-Ups Recipe
Makes 11 roll-ups
Ingredients:
- 1 (16-ounce) pack lasagna noodles
- Vegetable or olive oil
- 1 large egg, lightly beaten
- 1 (15- to 16-ounce) container whole-milk ricotta cheese
- 1 cup (about 3 ounces) finely grated parmesan cheese
- 1 pound shredded whole-milk mozzarella cheese
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 2 (17-ounce) bags frozen spinach, thawed and excess liquid squeezed out
- 2 (22-ounce) jars marinara sauce
Directions:
Preparation
- Preheat the oven to 350°F (180°C).
- Boil the noodles, then cool them under cold water. Coat both sides of each noodle with oil to prevent sticking.
The Filling
- In a large bowl, combine the egg, ricotta, half of the parmesan, and all of the mozzarella. Add salt and pepper to taste.
Assembly
- Lay out the noodles in rows of 2 lengthwise, overlapping them slightly to make rolling easier.
- Evenly spread the cheese mixture on each row of noodles.
- Distribute the spinach evenly.
- Roll the noodles, setting each seam-side down to keep it together.
Baking
- Cover the bottom of an extra-large baking dish with 1 jar of marinara sauce.
- Place the noodle rolls on top of the sauce, then cover with half of the remaining jar of sauce.
- Cover the dish with foil and bake on the middle rack for 40 minutes.
- Heat up the last of the marinara sauce and serve it on top with the remaining parmesan cheese. Serve immediately and enjoy!
