Savory Morning Delight: Apple, Blue Cheese, and Bacon Omelet
Imagine starting your day with a flavorful twist on the classic omelet. This recipe combines the sweetness of apples with the smokiness of blue cheese and crispy bacon, all wrapped up in a tender egg package.
The Perfect Ingredients
To create this masterpiece, you’ll need:
- 3 tablespoons of unsalted butter
- 1/2 medium sweet apple, peeled, cored, and thinly sliced
- 6 large eggs
- 4 teaspoons of whole milk
- 1/2 teaspoon of kosher salt
- 1/4 teaspoon of freshly ground black pepper
- 2 tablespoons of crumbled blue cheese (such as Stilton)
- 2 bacon slices, cooked and crumbled
Prepare for Takeoff
Begin by melting 1 tablespoon of butter in an 8-inch nonstick frying pan over medium heat until foaming. Add the sliced apples and cook, stirring occasionally, until they’re tender and lightly caramelized, about 4 minutes. Set them aside in a small heatproof bowl.
The Egg-cellent Mix
In a large bowl, whisk together the eggs, milk, salt, and pepper until pale yellow and smooth. Set two serving plates aside, ready for the finished omelets.
Assembling the Masterpiece
Melt another tablespoon of butter in the reserved frying pan over medium heat until foaming. Pour in half of the egg mixture (about 3/4 cup) and stir constantly with a rubber spatula until the eggs form small curds, about 2-3 minutes. Gently shake the pan and use the spatula to spread the egg mixture evenly across the pan.
Adding the Finishing Touches
Sprinkle half of the blue cheese, followed by half of the apples and half of the bacon, down the middle third of the egg mixture. Remove the pan from heat and use the spatula to fold a third of the omelet over and onto itself, making sure to enclose the filling. Gently push the folded side of the omelet toward the edge of the pan and tilt it onto one of the serving plates, seam side down.
Repeat and Serve
Repeat the process with the remaining ingredients and serve both omelets immediately, accompanied by crispy home fries on the side. If blue cheese isn’t your thing, feel free to substitute with shredded sharp cheddar cheese for an equally delicious twist.
