Coffee Lovers Rejoice: A Decadent Mud Pie Recipe

Mud pie, a classic dessert, has been delighting palates for generations. However, there’s a lesser-known variant that’s sure to satisfy coffee enthusiasts: the coffee mud pie. This indulgent treat requires only three essential components: a chocolate cookie crust, coffee ice cream, and fudge sauce.
A Modern Twist
Our version stays true to the original, featuring an intense espresso gelato and rich chocolate ganache. To take it to the next level, we’ve added a dollop of sweetened whipped cream on top. This easy-to-make pie is perfect for parties and can be assembled in advance.
Important Notes
Before you begin, ensure you have sufficient freezer space to accommodate the pie. Also, be mindful of serving this caffeinated treat to children, as it may lead to a burst of energy!
The Essentials
Crust
- 30 chocolate cookie wafers (such as Nabisco Famous Chocolate Wafers)
- 4 tablespoons unsalted butter (1/2 stick), melted and cooled
Ganache
- 4 ounces semisweet chocolate, coarsely chopped
- 1/2 cup heavy cream
- 1 tablespoon unsalted butter
Assembly
- 1 quart Espresso Gelato (or coffee ice cream)
- 1 cup heavy cream
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
Instructions
Crust
- Preheat your oven to 350°F and arrange a rack in the middle.
- Process the cookies in a food processor until they resemble coarse crumbs.
- Add the melted butter and mix until evenly combined.
- Press the crumb mixture into a 9-inch pie plate and bake for 10-15 minutes.
Ganache
- Place the chocolate in a heatproof bowl and set aside.
- Bring the cream to a simmer in a small saucepan and pour it over the chocolate.
- Let it stand for 5 minutes, then add the butter and stir until smooth.
Assembly
- Soften the gelato in the refrigerator for 30 minutes.
- Place the cookie crust in the freezer until chilled.
- Spread the softened gelato into the crust in an even layer.
- Pour the warm ganache over the gelato and tilt the pie plate to evenly coat.
- Freeze the pie for at least 3 hours.
Serving
- Let the pie sit at room temperature until the ganache begins to soften.
- Whisk the heavy cream, sugar, and vanilla until soft peaks form.
- Serve the whipped cream atop pie slices.
