Warmth in a Bowl: Hearty Winter Stew
As the snowflakes fall gently outside, there’s nothing quite like a comforting bowl of stew to warm the heart and soul. This recipe is a game-changer for a cozy winter’s day, serving up enough for five hungry individuals.
Gather Your Ingredients
- 1 large white onion
- 4 large carrots
- 1 swede
- 5 white potatoes
- 1/2 a smoked gammon joint
- 2 beef stock cubes
- 2 tablespoons of olive oil
- Half a bag of yellow split peas
Let the Magic Begin
Start by heating a medium-sized stock pot over high heat with a drizzle of olive oil. Roughly chop the onion and sauté until golden brown. Next, peel and chop the carrots, swede, and potatoes into bite-sized pieces.
Add the Aromatics
Add the chopped vegetables to the pot, followed by the half gammon joint, split peas, and crumbled stock cubes. Pour in boiling water to fill the pot, then reduce the heat to a low simmer.
Let it Bubble
Allow the stew to cook for approximately 3.5 hours, stirring occasionally every half hour or so. As the meat tenderizes, use a wooden spoon to break it apart. The finished broth should be rich and thick, with the split peas fully incorporated.
Serve and Savor
Serve the stew hot, accompanied by a crusty loaf of fresh bread. The perfect comfort food to warm your belly and your heart on a cold winter’s day.
