Ingredients
- 2 1/2 cups cold water
- 1 1/4 cups granulated sugar
- 1 pound frozen mango chunks
- 2 (1/4-ounce) packets unflavored gelatin
- 1/2 teaspoon kosher salt
- 1 cup heavy cream, chilled
- 1 teaspoon freshly squeezed lime juice
Step-by-Step Instructions
Prepare the Ramekins and Sugar Mixture
Place 8 (6-ounce) ramekins on a baking sheet and set aside. In a small saucepan, combine 3/4 cup of water and 1/2 cup of sugar over high heat, stirring until the sugar is dissolved and the mixture is boiling. Remove from heat.
Blend the Mango and Sugar Mixture
Add the mango chunks to a blender, pour in the sugar mixture, and blend on medium-high until very smooth. Pour the mixture through a fine mesh strainer set over a medium bowl, discarding any pulp or stringy fibers. Measure 2 cups of the purée and reserve any extra for another use.
Dissolve the Gelatin and Sugar
In a separate saucepan, bring 1 1/4 cups of water to a boil. In a large mixing bowl, whisk together the remaining 3/4 cup sugar, gelatin, and salt. Add the boiling water and whisk until the gelatin and sugar are dissolved.
Combine the Mango Purée, Cream, and Lime Juice
Add the 2 cups of mango purée, heavy cream, and lime juice to the bowl and whisk until evenly combined. Divide the mixture evenly among the ramekins and refrigerate until set, at least 2 hours.
Enjoy your creamy and refreshing mango pudding!
