  • 1 7- to 8-ounce round Gouda, wax removed, at room temperature
  • 1 large egg, for egg wash
  • 1 tablespoon olive oil

Making the Pesto

But before we dive into the Gouda, let’s talk about the pesto. This flavorful sauce is made with just a few ingredients:

  • 2 cups packed fresh basil leaves
  • 2 garlic cloves, peeled
  • ¼ cup pine nuts
  • 2/3 cup extra virgin olive oil
