A Family Favorite: Creamy Macaroni and Cheese
Growing up, I had a special treat that never failed to put a smile on my face – my mother’s signature macaroni and cheese. This comforting dish was a staple at family gatherings, and I would often devour four or five helpings in one sitting! What sets this recipe apart is its unique twist on the traditional bechamel sauce, making it easier to prepare and slightly lighter on the palate.

Gather Your Ingredients
- 3 tablespoons unsalted butter, divided
- 1 small to medium onion, chopped
- 12 ounces medium shell pasta
- 6 ounces sharp cheddar cheese (preferably Vermont), grated
- 1/2 tsp mustard powder
- 1/4 teaspoon cayenne red pepper
- 2 cups low-fat milk
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup coarse breadcrumbs

Step 1: Prepare the Onion and Pasta
Preheat your oven to 350°F. In a large skillet, sauté the chopped onion in 1 tablespoon of butter until soft and pale golden. Meanwhile, heat several quarts of water to boiling and cook the pasta shells, stirring occasionally, until al dente. Be careful not to overcook, as they will continue cooking in the oven. Drain the pasta and set aside.
Step 2: Mix and Assemble
In a large bowl, combine the cooked pasta, remaining ingredients (except breadcrumbs and the remaining 2 tablespoons of butter). Grease a baking dish large enough to hold the mixture and add the pasta and cheese blend, spreading it out evenly.
Step 3: Top and Bake
