Hollandaise Sauce

  • 2 large egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 8 tablespoons unsalted butter (1 stick), melted
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Sandwiches

  • 4 (1/4-inch-thick) slices Canadian bacon (about 2 ounces)
  • 4 English muffins, split and toasted
  • 3 tablespoons unsalted butter
  • 4 large eggs
  • Kosher salt
  • Freshly ground black pepper

Step 1: Prepare the Hollandaise Sauce

Fill a large saucepan with water and bring to a simmer. Remove from heat and set aside. Blend egg yolks and lemon juice until lightened in color. Slowly drizzle in melted butter, then add salt and pepper. Pulse to combine. Keep warm by placing the blender pitcher in the reserved hot water.

Step 2: Cook the Canadian Bacon

Heat a large nonstick frying pan over medium heat. Add Canadian bacon and cook until heated through and lightly browned on both sides. Remove to a plate, cover with foil, and set aside. Reserve the pan.

Step 3: Assemble the Sandwiches
