A Fusion of Flavors: The Ultimate Charoset Recipe
Blending Traditions
When it comes to charoset, the traditional Passover dish, there are two main schools of thought: Ashkenazic and Sephardic. The former is known for its tangy apples, while the latter incorporates sweet and chewy dried fruits. We’ve taken the best of both worlds and created a unique fusion that will delight your taste buds.
A Delicious Twist
Our charoset recipe combines the tartness of Granny Smith apples with the sweetness of dates and figs, all infused with the warmth of cinnamon and orange zest. The result is a dip-like spread that’s perfect for scooping up with matzo during Passover, or served with cheese and crusty bread afterwards.
Easy to Make
This recipe yields 3 cups of charoset and takes only 20 minutes to prepare, with 10 minutes of active cooking time. It’s an easy and delicious addition to your Passover celebrations.
Gather Your Ingredients
- 1 1/2 cups toasted walnuts
- 2 small Granny Smith apples, peeled and chopped
- Juice of 1/2 lemon
- 4 ounces dates, pitted and quartered
- 4 ounces dried figs, stemmed and quartered
- 1/3 cup kosher-for-Passover brandy
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon finely grated orange zest
- Kosher salt and freshly ground black pepper
- Matzo, for serving
Let’s Get Started
Chop the Walnuts
Place the walnuts in a food processor fitted with a blade attachment and pulse until finely chopped, but not a paste. This should take about 20 one-second pulses. Transfer the chopped walnuts to a large bowl.
Prepare the Apples
Add the chopped apples and lemon juice to the food processor and pulse until finely chopped, about 25 one-second pulses. Transfer the apple mixture to the bowl with the walnuts and set aside.
Chop the Dates and Figs
Place the dates and figs in the food processor and pulse until finely chopped, about 30-40 one-second pulses. Set the mixture aside in the bowl of the food processor.
Infuse with Flavor
Bring the brandy to a boil in a small saucepan over medium heat, then remove from heat. Add the reserved date-fig mixture, cinnamon, and orange zest, and stir to combine. Let the mixture sit for 10 minutes.
Combine and Season
Stir the fig mixture into the apple-walnut mixture until well combined. Season to taste with salt and pepper. Serve with matzo and enjoy!
