Savory Thanksgiving Turkey with Rich Gravy
The Perfect Roast
A succulent, herby turkey is the centerpiece of any Thanksgiving feast. To achieve this culinary masterpiece, start by preheating your oven to 450°F. Ensure your turkey is fully thawed and pat it dry with paper towels before seasoning.
Herby Butter Under the Skin
Mix softened butter with chopped sage, winter savory, marjoram, rosemary, thyme, and parsley. Loosen the turkey’s breast skin and spread the herby butter evenly underneath. This will infuse the meat with incredible flavor.
Roasting the Turkey
Place the turkey on a rack in a large roasting pan and roast for 30 minutes. Then, lower the oven temperature to 350°F and continue roasting for 12 minutes per pound. Baste the turkey with pan drippings every 45 minutes to keep it moist. Use a meat thermometer to ensure the internal temperature reaches 155°F.
Gravy Preparation
While the turkey rests, prepare the rich and creamy gravy. Melt butter in a medium saucepan over medium heat and whisk in flour to create a blond roux. Cook until the flour loses its raw flavor, then whisk in chicken broth and bring to a simmer.
Finishing Touches
Transfer the turkey to a platter and pour off excess fat from the roasting pan, reserving 1 tablespoon. Add herbs to the pan and fry for 2 minutes, then deglaze with sherry and scrape up browned bits. Whisk in the heavy cream and simmer to thicken the gravy slightly. Season with salt and pepper to taste.
Serve and Enjoy
Carve the turkey and serve with the luscious gravy and your choice of sides, such as Apple Stuffing. Your guests will be impressed by the complexity of flavors and the tender, juicy meat. Happy Thanksgiving!
