Before we dive into the recipe, it’s essential to note that refrigerating the custards immediately after broiling will cause the caramel tops to liquefy. Additionally, the cooking times provided are based on our tests, but you may need to adjust them slightly depending on your microwave and toaster oven.

Gather Your Ingredients

  • 1 1/2 cups heavy cream
  • 3 large egg yolks
  • 1/4 cup granulated sugar, plus 5 tablespoons for topping
  • 1 teaspoon vanilla extract
  • Hot water

Microwave Magic Begins

In a large microwaveable mixing bowl, heat the cream uncovered for 3 minutes. Meanwhile, whisk together the egg yolks, 1/4 cup sugar, and vanilla extract in a separate large mixing bowl until well combined.

The Custard Comes Together

Whisking constantly, pour the heated cream in a thin stream down the side of the bowl of egg mixture. Once combined, divide the custard among four 1/2-cup ramekins (or any ovenproof or microwaveable container, like a mug).

Microwave and Chill

Place the custards in a shallow microwaveable dish, ensuring they don’t touch one another. Pour hot water between the ramekins until it reaches two-thirds of the way up the sides. Microwave until the center of the custards is just set, about 3 to 5 minutes. Remove from the microwave and let completely cool in the water. When cool, refrigerate covered for at least 1 hour.

The Final Touch: Caramelization

Heat your toaster oven to broil. Once heated, sprinkle about 4 teaspoons sugar on each custard. Place the custards under the broiler for about 5 minutes, or until the tops are caramelized and golden brown; watch carefully to avoid burning. Remove from the oven and serve. (Alternatively, use a conventional oven set to high broil, arranging the rack in the upper third of the oven.)
