To create this mouthwatering bisque, you’ll need:
- 2 pounds shell-on shrimp
- 4 tablespoons unsalted butter
- 2 medium yellow onions, diced
- 2 medium carrots, peeled and diced
- 2 medium celery stalks, diced
- Kosher salt and freshly ground black pepper
- 2 tablespoons tomato paste
- 5 fresh thyme sprigs
- 2 medium bay leaves
- 5 cups water
- 3 tablespoons all-purpose flour
- 1/2 cup Cognac
- 3/4 cup heavy cream
- 1/4 teaspoon cayenne pepper
Preparing the Shrimp and Aromatics
Begin by peeling the shrimp, reserving the shells for later use. Coarsely chop the shrimp into bite-sized pieces and refrigerate until ready to use. In a large saucepan, melt 1 tablespoon of butter over medium heat. Add the diced onions, carrots, celery, and reserved shrimp shells, seasoning with salt and pepper. Cook, stirring occasionally, until the onions are tender and the shells are pink, about 5 minutes.
Creating the Flavorful Broth
Increase the heat to medium-high and add the tomato paste, thyme, and bay leaves, stirring until the vegetables are coated. Add the water, stirring to combine, and bring to a boil. Season with salt and freshly ground black pepper to taste.
