Discover the Flavors of Southern Italy: Taralli Recipe
A Taste of Tradition
Taralli, a classic ring-shaped biscuit, is a staple in Southern Italian cuisine. With its crispy exterior and soft interior, this delightful treat is perfect for snacking or as a accompaniment to your favorite meals.
The Ingredients
To create this Italian gem, you’ll need:
- 2 teaspoons active dry yeast
- 1/2 cup warm white wine
- 1/2 cup warm water
- 3 cups all-purpose flour
- 2 cups semolina flour
- 1/2 cup olive oil
- 3 tablespoons lightly crushed fennel seeds
- Salt to taste
The Process
Begin by combining yeast, white wine, and water in a large bowl. Allow the mixture to bubble up for several minutes before stirring to mix well.
Mixing the Dough
Next, add flour, semolina, olive oil, fennel seeds, and salt to the bowl. Mix the ingredients together until a dough forms. Turn the dough onto an unfloured board and knead until it becomes smooth and elastic.
Rising to the Occasion
Lightly oil a clean, dry bowl and return the dough. Cover the top with a damp towel and let it rise for 45 minutes or until puffy.
Shaping the Taralli
Divide the dough into small pieces and roll each into a long, slim pencil. Cut the pencils into 3-inch lengths and pinch the two ends firmly together to form a ring.
Boiling and Baking
Preheat your oven to 375°F. Bring a pot of salted water to a rolling boil and drop the taralli in, a few at a time. When they rise, remove and drain on a kitchen towel. Arrange the boiled taralli on a greased cookie sheet and bake for 15 to 20 minutes, until golden brown and crisp.
The Result
With these simple steps, you’ll be rewarded with 4 to 5 dozen delicious taralli, perfect for snacking or sharing with friends and family. Enjoy!
