Unlike the heavy, savory sauces often found in Chinese takeout, this Thai delight was lighter, sweeter, and utterly irresistible. Determined to uncover the secret behind this masterpiece, I turned to my tour guide, Phanpaiboon (Nud) Panudcha, a Chiang Mai native and skilled home cook.
The Three Musketeers of Thai Cuisine
Nud revealed that the key to Thailand’s most authentic dishes lies in a trio of spices known as the “three musketeers”: coriander, black pepper, and garlic. This ancient combination, also referred to as kratiem prik thai, has been used for generations to elevate the flavors of meat and seafood. Crafting the Perfect Blend
To create the three musketeers mixture, simply grind 4 cloves of garlic, ½ teaspoon of black pepper, and ½ cup of coriander root (or cilantro leaves and stems as a substitute) using a mortar and pestle or food processor. Adjust the consistency to your liking.
