To create an umami-rich sauce, we turn to the humble porcini mushroom. By soaking them in hot water, we extract their earthy goodness and use the resulting liquid to add depth to our sauce. Combined with sautéed cremini mushrooms, onions, and kale, this mixture is then reduced with wine to intensify the flavors.

To complete the sauce, we add a dollop of sour cream, a pat of butter, and a splash of pasta cooking liquid. The result is a luscious, creamy sauce that coats every strand of egg noodle perfectly.

Ingredients
- 1/2 ounce dried porcini mushrooms
- 2 cups water
- 2 tablespoons plus 2 teaspoons olive oil
- 8 ounces fresh cremini mushrooms
- 1 1/2 cups medium-dice yellow onion
- 1/2 teaspoon paprika
- 2 tablespoons all-purpose flour
- 1 bunch flat-leaf kale
- 3 medium garlic cloves
- Kosher salt
- Freshly ground black pepper
- 1/4 cup dry white wine
- 8 ounces dried egg noodles
- 2 tablespoons unsalted butter
- 1/3 cup sour cream
Instructions
- Soak the Porcini Mushrooms: Place the porcini mushrooms in a small heatproof bowl and pour boiling water over them. Let them sit for 12 minutes, then chop and set aside.
- Prepare the Sauce: Heat oil in a large frying pan over medium-high heat. Add cremini mushrooms and cook until browned, about 5 minutes. Remove and set aside.
- Add Aromatics: Reduce heat to medium, add remaining oil, and cook onion and paprika until softened, about 4 minutes.
- Add Kale and Garlic: Sprinkle in flour, then add kale and garlic. Cook until kale is wilted, about 1 minute.
- Combine Mushroom Mixtures: Add reserved mushrooms, wine, and mushroom soaking liquid to the pan. Simmer until sauce is slightly thickened, about 5-7 minutes.
- Cook Noodles: Bring a large pot of salted water to a boil and cook noodles according to package directions. Reserve 1/3 cup of cooking liquid and set aside.
- Finish the Sauce: Add reserved pasta cooking liquid, butter, and sour cream to the pan. Simmer until thickened, about 2 minutes. Season with salt and pepper to taste.
- Serve: Spoon the sauce over cooked noodles and enjoy!
