To bring this flavorful dish to life, you’ll need:
- 1 1/2 pounds chicken
- 1 stick butter, melted
- Salt and pepper to taste
- 1 1/2 cups seasoned bread crumbs (infused with Parmesan, Italian parsley, garlic, salt, and pepper)
- 1/4 lb. salt pork, cut into thin strips
- 1/4 lb. provolone, cut into thin strips
- Bay leaves
- Bamboo skewers (at least 6 inches long)
The Art of Preparation
Begin by cutting the chicken into 2-inch strips, pounding them thin to ensure even cooking. Brush with melted butter, seasoning with salt and pepper to taste. Sprinkle with seasoned bread crumbs, making sure to coat evenly.
Assembling the Skewers
Take 1 to 2 pieces of salt pork and 1 to 2 pieces of provolone, placing them at one end of the chicken strips. Roll tightly, securing with a bay leaf between each piece. Brush with melted butter and sprinkle with bread crumbs once more.
