A Flavorful Feast for the Whole Family

Looking for a dish that will please even the pickiest eaters? Look no further! This hearty one-pot wonder is packed with protein, fiber, and flavor, making it a perfect option for a family dinner or a crowd-pleasing gathering.

The Meat of the Matter

When it comes to choosing the right meat, the options are endless. However, for a leaner and more protein-rich option, bison (or buffalo) is an excellent choice. But feel free to experiment with other types of ground meat to find your favorite.

The Essential Ingredients

For this recipe, you’ll need:

  • 1 medium onion, diced
  • 1 large green bell pepper, diced
  • 3 stalks of celery, diced
  • 3 cloves garlic, smashed or diced
  • 1 pound of ground meat
  • 1 liter of meat stock (or vegetable stock)
  • 2 large cans of whole stewed tomatoes
  • 1 can of kidney beans
  • 1 can of black beans
  • 2 cups of sundried tomatoes
  • 3 Bay leaves
  • 1 tsp dry mustard
  • 1 tsp cayenne pepper
  • 3 tsp Creole or Cajun seasoning blend
  • 1/4 cup Brown Sugar
  • 2 Tbsp Balsamic vinegar
  • Salt to taste

Let’s Get Cooking!

Step 1: Sauté the Vegetables

Over medium-high heat, sauté 2/3 of the raw vegetables in 1 tablespoon of oil. Reserve the remaining raw vegetable matter.

Step 2: Brown the Meat

Once the onions begin to sweat, add your choice of ground meat. Brown to perfection.

Step 3: Add the Stock and Spices

When the meat is cooked, add the stock, bay leaves, dry mustard, and cayenne. Simmer over medium heat, stirring occasionally, until reduced by half.

Step 4: Add the Tomato Mix

Rehydrate the sundried tomatoes and dice. Puree the canned tomatoes in a food processor. Add to pot.

Step 5: Add the Beans and Seasonings

Rinse the canned beans in plenty of water, add to the pot along with brown sugar, balsamic vinegar, salt, and 2 tsp of Cajun or Creole seasoning. Reserve 1 tsp of seasoning.

Step 6: Simmer and Serve

Mix well and simmer over low heat for two hours, stirring occasionally. Add the remaining raw vegetables and seasoning to the pot and take off the heat. Mix well and allow to stand covered for five minutes. Serve and enjoy!

This recipe yields 8-10 servings and takes approximately three hours to prepare, with an active cooking time of about an hour. It’s a perfect option for a weekend dinner or a special occasion. So go ahead, give it a try, and savor the flavors!
