Ingredients:

  • 2 10oz packages of broccoli florets or 20oz of fresh broccoli
  • 1 can of Cream of Mushroom soup
  • 1 block of Velveeta cheese
  • 2 sleeves of Ritz Crackers (crushed)
  • Pinch of salt
  • Pepper to taste
  • 6 tspns butter
  • 1 cup of milk

Let’s Get Cooking!

Step 1: Prepare the Broccoli

Boil water with frozen broccoli until cooked, then drain completely. Alternatively, cut fresh broccoli into small florets and steam to your liking.

Step 2: Mix and Mingle

Salt and pepper the broccoli to taste. Cut the cheese into cubes and add 3/4 of them to the broccoli mixture. Stir in the Cream of Mushroom soup on medium-low heat until the cheese is mostly melted.

Step 3: Create the Cheese Sauce

Place the remaining 1/4 of the cheese cubes in a saucepan with milk and set to medium heat. Stir occasionally until the cheese is completely melted, then simmer while stirring occasionally.

Step 4: Assemble and Bake

Use one sleeve of crushed Ritz Crackers to layer the bottom of a 12×12 casserole dish. Add the broccoli mixture, followed by the cheese sauce. Top with another layer of crackers and place in the oven. Bake at 350°F for 25-30 minutes or until golden brown.

The Final Touches

Let the casserole cool for 10 minutes before serving. If desired, sprinkle shredded cheddar cheese on top during the last 5-10 minutes of cooking.

With this easy and delicious recipe, you’ll be well on your way to getting your family to eat their greens in no time!
