- 1 cup of shredded pork carnitas
- 2 large flour tortillas
- 4 large eggs

- 1/2 large ripe avocado, pitted, peeled, and sliced

Cooking the Carnitas and Eggs
Heat your oven to 300°F and warm 2 teaspoons of olive oil in a large nonstick frying pan over medium heat. Add the carnitas and cook until crispy and warmed through, about 5 minutes. Transfer to a bowl and cover to keep warm.
Next, warm the tortillas in the oven while you cook the eggs. Whisk the eggs in a medium bowl until broken up, then season with a pinch of salt and pepper.
