Frozen Lemonade with a Twist: Punch à la Romaine
A Refreshing Treat for Any Season
Punch à la Romaine is a European-inspired frozen lemonade that’s perfect for hot summer days or as a light and refreshing Christmas dessert. This unique treat combines the brightness of lemon with the richness of rum and Champagne, topped with a fluffy Italian meringue.
The Ingredients
- 1 medium navel orange
- 1 1/2 cups water
- 3/4 cup granulated sugar
- Finely grated zest of 1 medium lemon (about 2 teaspoons)
- 1/2 cup freshly squeezed lemon juice (from about 4 medium lemons)
- 2 large egg whites, at room temperature
- 3 ounces Champagne or sparkling wine, chilled
- 1 1/2 ounces rhum agricole blanc, chilled
What Makes Rhum Agricole Blanc Special
Rhum agricole blanc is a type of rum distilled in the French West Indies, using sugarcane juice instead of molasses. Its distinct flavor adds depth and complexity to our Punch à la Romaine.
Preparing the Orange
Finely zest the orange and set aside. Slice off the top and bottom of the orange, then follow the curve of the fruit to remove the remaining peel and white pith. Release the segments or supremes by slicing between the membranes, and refrigerate until ready to serve.
Making the Lemon Ice
Combine the water and sugar in a saucepan over high heat, stirring until the sugar dissolves. Remove from heat and stir in the lemon zest, orange zest, and lemon juice. Let the mixture infuse for 30 minutes at room temperature. Strain the mixture into a 13-by-9-inch dish and freeze until just set, about 1 hour. Rake through the mixture with a fork to break up any large chunks, then return to the freezer for another hour. Transfer the lemon ice to a container with a tight-fitting lid and store in the freezer for up to 2 weeks.
Assembling the Punch
When ready to serve, whisk the egg whites until stiff peaks form, about 3 minutes. Transfer the lemon ice to a large bowl and drizzle in the Champagne and rhum agricole. Stir gently to combine, then divide among 8 glasses. Top each serving with whipped egg whites and an orange segment. Serve immediately and enjoy!
