Celebrate Purim with a Twist: Raspberry Hamantaschen, Gluten-Free and Dairy-Free
Purim is just around the corner, and what better way to celebrate than with a delicious, allergy-friendly treat? Introducing Raspberry Hamantaschen, a mouthwatering pastry that’s both gluten-free and dairy-free.
The Perfect Ingredients
To make these scrumptious Hamantaschen, you’ll need:
- 2 cups of blanched almond flour
- ½ teaspoon of Celtic sea salt
- 2 tablespoons of grapeseed oil
- 2 tablespoons of agave nectar
- 1 tablespoon of vanilla extract
- 1 tablespoon of water
- Some raspberry jam for filling
Let’s Get Started!
Begin by combining the almond flour and salt in a large bowl. In a separate bowl, mix together the oil, agave nectar, vanilla extract, and water. Then, gently fold the wet ingredients into the dry mixture.
Chill, Roll, and Cut
Refrigerate the dough for at least 1 hour to allow the flavors to meld together. Once chilled, roll out the dough between two pieces of parchment paper to a thickness of ¼–½ inch. Use a cookie cutter or the rim of a glass to cut out circles of dough. Make a light indentation in the center of each circle with your forefinger – this will help hold the jam in place.
Assemble and Enjoy!
Fill each circle with a dollop of raspberry jam, and fold the dough into a triangle to create the iconic Hamantaschen shape. Bake until golden brown, and serve warm to your friends and family. With these Raspberry Hamantaschen, everyone can join in the Purim celebration, regardless of dietary restrictions!
