The Perfect Patty
To begin, divide 2 pounds of ground chuck into 4 portions and shape them into evenly sized patties. Be gentle when handling the meat to ensure a light and juicy texture. You can even prepare the patties ahead of time, covering and refrigerating them overnight.
Firing Up the Grill
When you’re ready to cook, heat 2 tablespoons of olive oil in a large frying pan or grill pan over medium-high heat until very hot. Alternatively, heat an outdoor grill to medium-high (about 375°F to 425°F). Generously season the meat on both sides with kosher salt and freshly ground black pepper.
