When it comes to cooking trout, there’s no better way than grilling it over an open flame. For this recipe, we’re taking the hassle out of catching and cleaning by using store-bought, boneless, and butterflied fish. The result is a mouth-watering dish that’s sure to impress.
Sourcing the Perfect Ingredients
To make this recipe a success, you’ll need a few essential ingredients. Boneless, butterflied trout can be found in most grocery stores, making it easy to get started. Additionally, you’ll need a medium lemon, a generous handful of mixed herbs, and four pieces of thinly sliced smoked bacon or turkey bacon.
Preparation is Key
To ensure a seamless cooking experience, prepare your ingredients ahead of time. Wash and slice the herbs, and slice the lemons the day before your camping trip. This will save you time when it’s time to cook.
Grilling Over an Open Flame
Build a campfire and place a grilling rack over it. Open your grilling basket and place it over a cutting board. Lay the trout in the grilling basket, opened up like a book, and sprinkle the flesh generously with salt and pepper mix. Distribute the lemon slices and herbs evenly among the trout, laying them on the left half of each fish.
Adding the Finishing Touches
Close the right half of the trout over the filling, securing each fish by wrapping a slice of bacon around its middle section. Sprinkle the outside of each fish with salt and pepper mix, and close the grilling basket.

Set the grilling basket over the campfire, directly on the grill rack. Cook, flipping the grilling basket occasionally, until the trout are nicely browned, the bacon is rendered, and each fish’s flesh is opaque and flakes easily with a fork. Remove from heat, open the basket, and transfer the fish to a serving platter.
Alternative Cooking Methods
If you don’t have access to a campfire, don’t worry! You can also cook this dish on an outdoor grill over high heat (500°F) for about 5 minutes, or indoors by preparing the fish as directed and placing it on a foil-lined, rimmed baking sheet under a heated broiler.
