Gather Your Ingredients

  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp grated fresh ginger
  • 2-3 large onions, pureed
  • 6-8 tomatoes, finely chopped or pureed
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt to taste
  • Pinch garam masala
  • Water, 1-2 cups
  • 8 hard-boiled eggs
  • 3-4 large potatoes, boiled and cut into 1-inch cubes
  • Cilantro, chopped

Preparing the Curry

Begin by hard-boiling the eggs and peeling them. Slit them halfway through and set aside. Next, chop and boil the potatoes until they’re done. Meanwhile, dice or puree the tomatoes and onions separately.

The Magic Happens

Heat oil in a wok or sauté pan over high heat. Add cumin seeds and let them splutter. Then, add grated ginger and stir well. Add the pureed onions and cook until they’re brown and the oil begins to separate from the mixture. This step is crucial, as it lays the foundation for the rich flavors to come.
